Matar by Pelter Blanc de Noir Brut
Sparkling wine. Produced from 100% Pinot Noir grapes. Produced by he traditional method. The grapes were handpicked from our vineyard in the north Golan Heights. A sparkling, crispy and dry wine with brioche aromas and delicate fruit flavors. The grapes are harvested at the beginning of the season when the sugar level is low and the acidity is high. After squeezing, the grapes undergo a short soaking of several hours on their skins, hence their very delicate pinkish color. Preliminary fermentation in a stainless steel tank until relatively low alcohol levels are obtained. The wine is bottled and fermented for a second time for 18 months on yeast that, when bottled is placed on its side. Over the years, the yeast turns the sugar into alcohol and creates a natural and gentle bubbling. The process is long, complex and precise, each bottle receives dedicated and personal care. Bottled in limited quantity.
