Flam Reserve Cabernet Sauvignon 2013
Varietals: The Cabernet Reserve is a blend of 85% Cabernet Sauvignon 9% Merlot 3% Petit Verdot and 3% Cabernet
Franc sourced from our very best of plots in the Dishon & Ben-Zimra vineyards (Upper Galilee) and Mata
(Judean Hills).
The grapes were carefully selected and hand-harvested in early morning hours from low yielding vines.
Vinification: At the winery the grapes are destemmed then cold macerated for 48 hours.
The fermentation takes places in stainless steel temperature controlled tanks at 26-28 degrees for 12 days with regular
remontage in order to extract colour aromas and varietal character.
The wine is then pressed let to clarify naturally and moved to our cellars for ageing.
Maturation: The wine ages in French oak barrels of which 60% are new at the rest one to two years old.
Each varietal ages separately for 16 months after which the final blend takes place.
After bottling the wine is aged for an additional 10 months in our cellars.
Ageing Potential:
Drinks well now but will improve over the next 10 to 15 years.
About the Vintage: 2010 was a good and warm year. The summer kicked in late but when it did temperatures were
higher than usual. The harvest was an early one with the grapes reaching full maturity at an early stage.
This results in fuller and richer wines with depth and complexity who will improve over the next few years.
Winemaker's notes: Soft ripe fruit on the nose complimented by elegant oak spice and a hint of minerality.
The palate is generous and balanced with ripe fruit soft spice and a good tannic structure.
The finish is mineral complex and long.
