Varietal content: 85% Chardonnay Cabernet and 15% Cabernet Sauvignon
Aging: 6 months in oak barrels
About the wine: Immediately after harvesting by hand in the early hours of the morning, the Chardonnay grapes were separated and squeezed, maintaining cool temperatures. The clusters of Cabernet Sauvignon were squeezed whole using a special process to produce almost colorless grape juice destined to become white wine (blanc de noir). The juice was fermented at a very low temperature in new barrels where it rested on yeast for 6 months sur-lie.
