Region: The higher elevations of the Upper Galilee.
Variety: Cabernet Sauvignon.
Style: A rich flavorful wine with black cherry, ripe plum, wild berry and
blueberry jam characters, and a delicate background fragrance of mint
and tobacco. Glittering red in color, the elegant, medium-to-full bodied
wine has a well balanced acidity and a long-lasting finish.
Data: The wine fermented 7-14 days in stainless steel containers, underwent
malolactic fermentation to preserve its fruity character, and aged six
months in stainless steel containers.
The harvest: The winter preceding the 2011 harvest was cold with rainfall
significantly above the annual average, and the spring growing season
was 2-3 degrees colder than normal. Due to such cool climatic
conditions, the vines awakened from their winter hibernation late, and
their development during the season was delayed by two weeks to a
month. As a result, the harvest of most blocks was delayed by up to a
month. Mild weather during the growing season enabled the
development of pleasant flavors, which should be reflected in the
quality of our wines.
